Maryland Parkway’s the yoU at University Gateway announces two new eateries to its list of retail partners: Pizza Forte and Sushi Joe’s. The new tenants join other first-floor eateries such as Peet’s Coffee, Crumbl Cookies, Ike’s Love and Sandwiches and Roberto’s Taco Shop. the yoU at University Gateway is the new, mid-rise luxury urban living development transforming Maryland Parkway into a desirable neighborhood, with convenient access to UNLV, Sunrise Hospital, the Strip and McCarran International Airport.

Loosely translated from Italian as “powerful pizza,” Pizza Forte opens its fourth location in Las Vegas, offering New York-style pizza and square, Roman-style pan pizza by the slice with toppings including homemade sausage and fresh vegetables, as well as gluten-free options. Pizza Forte also offers house-made meatballs, pasta, Italian street food, as well as Hofmann hot dogs and sausages. 

Chef Joe Richardson is the culinary mastermind behind Sushi Joe’s. After years of training and working for the most prolific names in the restaurant industry, Richardson brings a unique cutting-edge menu to the Sushi Joe’s concept. Other previously announced eateries include: 

  • Peet’s Coffee brings freshness, flavor and convenience to residents of the yoU and visitors of University Gateway. A walk-in coffee shop, Peet’s introduced an artisan movement by sourcing the world’s best beans, hand-roasting in small batches, and crafting beverages by hand.
  • Crumbl Cookies brings warm, fresh and delicious cookies to Crumblrs everywhere. With its first location opening in Logan, Utah in 2017, Crumbl Cookies has expanded to over 31 locations in six states.
  • Ike’s Love & Sandwiches opens its second location in Las Vegas at University Gateway. Ike Shehadeh, the man behind the sandwich, always puts his customer’s happiness first. With over 500 sandwich combinations to choose from, Ike spreads the love by baking his “Dirty Secret Sauce” right into the bread.
  • Roberto’s Taco Shop, a staple in the Las Vegas community, serves real Mexican food proudly featuring the freshest ingredients. With more than 50 years of service, Roberto’s remains the pioneer in fast, traditional and authentic Mexican food. They are relocating their first Nevada location to University Gateway.
