Caviar Bar at Resorts World Las Vegas Debuts New Menu Items

Caviar Bar, Resorts World Las Vegas’ world-class seafood and social dining restaurant featuring Michelin-starred restaurateur Shaun Hergatt’s new American cuisine, introduces new menu mainstays, Instagrammable cocktail presentations, and fanciful indulgences to its coastal cuisine offerings.

Now available on Michelin-starred restaurateur Shaun Hergatt’s Caviar Bar menu, delectable fare including delicacies to share like the Hudson Valley Seared Foie Gras (Strawberry White Balsamic, Brioche, Frisee – $29), and new entrees like the indulgent Chicken Roulade (Foie Gras, Vanilla Puree, Glazed Baby Carrots – $42), to name a few, join the lineup of land and sea offerings. The Caviar Bar menu serves Caviar and premium seafood in addition to all new menu items:

Australian Caesar Salad ($22) – Bacon, avocado, parmesan, croutons
Hudson Valley Seared Foie Gras ($29) – Strawberry White Balsamic, Brioche, Frisee

Lobster Roll ($28) – Maine Lobster, Brioche, Espelette

Chicken Roulade ($42) – Foie Gras, Vanilla Puree, Glazed Baby Carrots

Dover Sole ($89) – Citrus Relish, Caper Brown Butter, Micro Greens

Mashed Potatoes ($16) – Creamy Mashed Potatoes

Roasted Broccolini ($16) – Sherry Vinaigrette

Roasted Asparagus ($16) – Asparagus, Shaved Parmesan

In addition to the newly featured entrees and sides, now made permanent by popular demand from Caviar Bar’s Fries & Champagne Soiree, items like the Truffle Fries (Waffle Cut Fries, Parmesan, Truffle Oil – $16) are available on the bar menu. 

Caviar Bar’s newest additions are accompanied by a bevy of new craft cocktails like the Ho’omaluhia Mai Tai (Probitus Rum, Sorrel Syrup, Lime and Egg White) and the JP Old Fashioned (Suntory Toki, Shisho, Lilikoi), both of which are served tableside with mesmerizing features. For guests looking to share a snack, Caviar Bar’s new Cocktail Hour offers bite-sized options of some of the restaurant’s most popular dishes and new specialty cocktails, caviar, Champagne and more. Cocktail Hour is only offered at the bar. 

Caviar Bar is open for dinner service Monday – Thursday from 5:30 p.m. to 9 p.m., Friday and Saturday from 5:30 p.m. to 10 p.m., and open for brunch Sundays from 11 a.m. – 7 p.m.; for the full menu or to book your reservation, guests may visit www.caviarbarlv.com
